James Thomas
James Thomas has been in the restaurant trade for over 16 years and brings to Gilby's a wide range of people skills and experience. James treats all Gilby's customers, as invited dinner guests, and extends the same polite friendliness that you would experience if you were visiting him for an evening at home.

With long standing placements at a few select quality restaurants James has lived and worked in Wales his whole career. James believes the change of Gilby's ownership is a very positive move. He will be instrumental in the modernisation of the dining room and his Front of House Team will work hard to maintain the excellent ethos of Gilby's.

Arlene Mason
Arlene's early career was as a child minder and has always enjoyed interacting with people. Having worked at Gilby's for many years, and as part of the Front Of House team, she takes pride in meeting and greeting regulars and new customers to the dining room every day. She has always said that the staff are regularly complimented on the attentiveness and polite way they treat all the diners. With the new ownership she is sure that changing the fixtures and fittings will only enhance the building and the food and reputation will remain intact and grow in the future.

“We have been coming to Gilby's for 4-5 years and eat lunch or dinner here twice a week. We know that Arlene and the kitchen staff always prepare the food exactly as we like it. The fish is always off the bone, without having to ask, and the staff always go out of their way to make us happy. We recently brought a team of Doctors to eat here and they said “They were extremely impressed and would return next time they were in the UK .”
