Kitchen Team
The chef's team produces dishes that are both visually stunning and intense with flavour. Their cooking has a distinctive style and confidence and Gilby's in their competent hands continues to go from strength to strength. The team are young and enthusiastic with a wealth of talent and experience. Which means that the high standards they aspire to are always maintained. Between them they have worked in some very prestigious restaurants and hotels. Including Llangoed Hall (Wales) and Illtuds 216 Restaurant in Llantwit Major (Wales).
The Kitchen, overseen by Kurt Fleming, serves thoughtfully prepared food using the latest cutting edge cuisine. Without however loosing the importance of locally sourced and freshly produced ingredients.
The style of the cuisine is Modern European with a flavour-some twist.
