Management Team
Michael Standerline
Michael Standerline went to school in Cardiff and has spent the last 18 years living in the Cardiff area. After Graduating Michael worked as an Accountant in the food, Wine, and Restaurant industry for many years. Michael met his current business partner Xavier Le Bellego in June 2003 after being introduced by a business associate.
Having worked successfully together at Forbury's Restaurant in Reading, the partnership have recently taken over The Red House in Marsh Benham and have proved very successful in turning The Red House into a quality eating experience. With the recent acquisition of Gilby's they have plans to modernize the dining room and build on the excellent food and wine offered at the Restaurant.
Michael says “We are keen to make Gilby's Restaurant a shining star in the Cardiff area and to grow into being the best eating establishment in South Wales. We plan to refurbish the Dining Room while maintaining the ambiance of fine dining. With the staff and management team we are confident, we will continue building on the strong foundations that have been established here.”
Xavier Le Bellégo
Xavier has a HND in catering and hospitality and a Sommelier Diploma. Xavier has worked with the internationally famous Raymond Blanc, John Burton Race and Albert Roux before opening The Red House, in Marsh Benham, near Newbury where he received the coveted “Gastro Pub of the Year” title for two consecutive years in 2002 & 2003. After selling his interest he set up a new restaurant in Reading called Forbury's, which was voted top 10 new restaurant in Haldens Guide and top 10 French Restaurants in the South of England by the Times in the summer of 2006. Xavier is also an acclaimed wine judge for the Sopexa since 2001.
Xavier Le-Bellégo has carefully compiled a comprehensive Wine-List for Gilby's Restaurant (Click here to see wine list). The List consists of over 240 wines with a variety of wines from around the world sourced carefully for your enjoyment to match with our menu which bursts with flavour and originality. With some 14 wines by the glass, you will find it exciting to try different wines with the food or simply as a drink at our bar.
Jackie O'Leary
Having spent several years in the customer Service industry, Jackie looks at Gilby's from a business perspective. The existing staff will benefit from her experience gained in her previous role working with Head Chef Darren John at Illtuds 216 Restaurant in Llantwit Major. Jackie will be instrumental as part of the management team in putting the Restaurant on the map as the best dining experience in South Wales. |
